Blackberry Liqueur

Add 25ml to a glass of prosecco for a homemade take on a Kir Royal. Delicious as a festive aperitif!

Ingredients

600g blackberries

a bottle of red wine

500g sugar

200ml gin

Method:

  1. Pour the wine over the blackberries in a large bowl and use a potato masher to crush.

  2. Cover with a tea towel and leave for a couple of days giving it a good mash every time you walk past.

  3. Sieve twice to remove any remaining blackberries

  4. Pass through a sieve lined with a muslin to remove any fine particles.

  5. Add the juice to a pan with the sugar and heat gently till the sugar dissolves, simmer gently for 5 minutes.

  6. Allow to cool in the pan.

  7. Once cool add in the gin and stir to combine

  8. Decant into pretty bottles and seal.

Will keep for a year.
