Baby Pancakes

One of my children’s favourite foods is pancakes. And when they were babies I came up with sugar-free, baby-friendly pancakes so that they could eat them as finger foods, perfect for baby-led weaning. Ever since then pancakes have been our go-to weekend breakfast. Here’s how to make baby pancakes.

I’m sure you’ve seen 2 ingredient pancakes or 3 ingredient baby pancakes on other baby weaning websites, well, in my opinion, they’re not really pancakes. They don’t have the same cake-like spongy texture and certainly don’t taste like pancakes. I think you cant really make pancakes so simply, they really should be called something entirely different!

I’ve used cinnamon and vanilla to give these pancakes some flavour. Without sugar or a pureed fruit to sweeten them, they could be quite bland but the natural sweetness that you get from these two spices give a really lovely delicate flavour.

I’ve also added some wholemeal flour for additional fibre, B vitamins and that essential nutrient iron that all babies need after 6 months of age. There’s a bit of a myth going around that babies shouldn’t have fibre. That’s actually wrong and we need to be gradually increasing the amount they have every day so that by the age of 2 they are eating 15g of fibre a day.

Ingredients
  

  • 75 g Plain flour
  • 65 g Wholemeal flour
  • 1 Egg
  • 225 ml whole milk
  • 1 tsp Baking powder
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • Butter or oil for the frying pan

Instructions
 

  • Mix together the two flours, cinnamon and baking powder.
  • Crack the egg into a measuring jug and beat with the milk and vanilla.
  • Add the flour mixture into the jug and combine with an electric hand whisk or pop it in the jug of a blender and whizz.
  • Heat the butter or oil in a large frying pan.
  • Add spoonfuls of batter to the pan and turn down the heat. Teaspoons make lovely mini pancakes for baby led weaning and tablespoons make bigger ones for older children and the grown ups!
  • Watch the top of your pancakes for mini air bubbles that pop, when the surface is covered flip the pancakes over. I use a fish slice to make this job easier.
  • Cook the other side for about 1 minute.
  • Allow to cool a little, then top with your favourite topping and serve, we like Greek yoghurt and fresh berries, Yum!

    1. Yes you can, pop into the freezer within a couple of hours of making them and they’ll keep for up to 3 months,
